I’ve visited Italy a couple of times this year. What surprised me most is that Italians love to enjoy sweets regardless of the occasion. Specially, peach cookies, one of the most popular dessert items you’ll often find on the table. 

Italian peach cookies, also known as pesche dolci, caught my attention as well. These cookies look exactly like a peach. Soft, reddish-yellow in color, with round shapes. The eyeful dessert is mostly served during holiday seasons. But I think you can also enjoy them during weekends, birthday parties, or just a simple family gathering.

After coming back from Italy, I tried making them myself. I tried to make those cookies in my own way, and it actually worked. Today, I’ll show you how I make these Italian peach cookies using the usual items I mostly have in my kitchen.

Besides, you can personalize the taste of this mario and peach cookies by adding anything you like. I even tried making this peach cookie using gluten-free flour, and it worked perfectly. So yes, this is one of the easygoing recipes I prefer.

Peach Cookies Ingredients & Substitutions

You don’t need anything fancy to make peach cookies. Most items are already in your pantry. A few peach-specific extras give these Italian peach cookies their real flavor and color.

For the Cookies

  • 4 cups all-purpose flour; swap for a 1:1 gluten-free blend if you want gluten-free peach cookies
  • 1 tablespoon baking powder; check the date. Old powder means flat cookies
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ⅔ cup whole milk; gives the softest crumb
  • 1 stick (8 tablespoons) unsalted butter, melted
  • ¼ cup peach nectar or peach juice: nectar is thicker and sweeter
  • 3 tablespoons peach schnapps; optional. Skip it for first birthday peach cookies or alcohol-free batches, and add the same amount of extra nectar instead
  • 3 eggs

For the Buttercream Filling

  • ¼ cup unsalted butter
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup powdered sugar
  • 2 tablespoons peach preserves; real fruit chunks add texture

For Decorating

  • ⅔ cup peach nectar or juice, divided
  • ¼ teaspoon vanilla extract
  • Red and yellow food coloring
  • 1 ½ cups granulated sugar, for rolling
  • Mint or basil leaves, optional garnish

If you want a healthier version of the traditional peach cookies, you can just cut the powdered sugar in the filling by a third and swap half of the butter or palin Greek yogurt. Even after this change, the texture will remain the same. 

How To Make Peach Cookies

Step 1: Mix the Wet Ingredients

Preheat your oven to 350°F. Line two baking sheets with parchment. Whisk sugar, milk, melted butter, schnapps, nectar, and eggs together.

Step 2: Add the Dry Ingredients

Stir in flour, baking powder, and salt. Mix just until combined. Overmixing makes tough peach cookies.

Step 3: Shape and Bake

Spray your hands with nonstick spray. Scoop one tablespoon of dough per cookie. Roll into balls and space them out. Bake 14 to 15 minutes, until the bottoms turn golden.

Step 4: Hollow While Warm

Let the cookies cool two to three minutes. Cut a small hole into the flat side of each one. Do this while they’re still warm, or they’ll crack.

Step 5: Make the Buttercream

Beat butter, vanilla, and salt until fluffy. Add powdered sugar gradually. Fold in the peach preserves last.

Step 6: Fill and Sandwich

Spoon buttercream into each hollow. Spread a thin layer on the flat side too. Press two halves together to form a peach shape.

Step 7: Color and Coat

Split the remaining nectar into two bowls. Tint one red, one yellow. Paint each cookie half with both colors, then roll in sugar.

Step 8: Chill and Serve

Cover and refrigerate at least 8 hours, up to overnight. This softens the cookies fully. Garnish with a mint or basil leaf before serving.

Pro Tips

  • Don’t skip the chill time. It’s what turns firm cookies into soft, cake-like peach cookies. Overnight works best if you’re prepping ahead for a party.
  • Use a #60 cookie scoop. It keeps every cookie the same size. Matched halves make a neater, more realistic peach shape.

  • If your kitchen runs warm, chill the dough for 15 minutes before scooping. Sticky dough is hard to roll and holds less shape in the oven.
